Vegan Blueberry Cobbler Recipe

Blueberry cobbler- a taste of summer.

Fresh blueberries = summer. And lucky for me these indigo-hued gems are not only gluten-free and chock full of antioxidants (every celiac goddess needs fistfuls of antioxidants, you know) but they're pretty much everything-free. So that shoots them right to the top of a certain allergy-prone goddess' Yum List. I've been plopping them into smoothies, scattering them in bowls of buckwheat flakes and simply munching on them straight from the colander. Ah. Blueberry heaven.

Once upon a time- in the innocent and carefree days of living merely gluten-free- I used to make a delectable (and ultra-easy!) Summer Blueberry Crisp. And Sour Cream Blueberry Muffins to die for. Click on those recipes for some serious berry indulgence. Go ahead. I won't mind. I'll wait. I won't be jealous. Well. Maybe just a wee bit jealous, now that I am gluten and casein-free. Not to mention, egg, soy, lemon, nut, legume, and a few more foods thrown in for good measure free.

Blueberry July

The view from our casita last night was a painting in progress- rapidly changing washes of color from east to west. The softest pink pushing into indigo. Cerulean dropping into sea green when you least expected it.

The day had been hot and dry and discouraging- I had realized abruptly, driving home in late afternoon glare to the beat of an REM song (I've got my spine, I've got my Orange Crush) that I had used a chicken bouillon paste in the previous night's green chile. I reached for it automatically. Without thinking. Just as I had the cup of herbal tea with lemon the night before that.

I felt like an idiot.

Calabasitas Recipe with Summer Corn, Zucchini, Green Chiles and Lime

This recipe makes enough for a generous side dish, perfect for picnics and backyard grilled suppers; but if you'd prefer to make this a one-dish meal, add in two generous cups of cooked chicken or drained canned black beans, pour into a casserole, cover and bake in a moderate 350ºF oven for 20 to 25 minutes or so, until heated through.

Dinner Out - Is It Worth It?


When it comes to taking dining risks, I'm a big rubbery wimp. I waited five long gluten-free years before I even dared to consider eating out. The dangers of cross contamination scare the living daylights out of me. Why? 

Back in my more innocent g-free newbie days I got sick at a friend's house. She was hosting a dinner party. Thinking I'd play it safe, I brought a pot of my homemade pumpkin soup. She thanked me, then stirred it with her ancient wooden spoon. Misery ensued.

But this winter I decided to be bold.

Gluten-Free Buttermilk Flatbread- Easy as 1-2-3

The easiest gluten-free cracker-flatbread ever.

There are days when keeping a Gluten-Free Pantry Quick Mix in your cupboard can come in handy. Yesterday- as the flannel grey sky spit snow at us out here in the high desert- a certain gluten-free goddess had a casita full of men to feed- including those devilishly handsome amigos of mine, Joey and Will. So Joey and I collaborated in my tiny blue tiled cocina and whipped up some tasty gluten-free comestibles.

Kicked Up Rockin' Guac. I made some hummus spiked with cilantro pesto. We served up an array of crudities, organic blue corn chips and salsa, chicken salad (from Will), my Pecan Crackers, jalapeno-stuffed olives, and my freshly made basil-pecan pesto with a spur-of-the-moment improvthat is a cross between a tender cracker and a tasty flatbread.

And I'm also thinking, Dear Reader, this dough might make for a delicious and fast gluten-free pizza crust.
