This is not your average weeknight cornbread. You know, the one you toss together from a gluten-free mix to serve with a bowl of white chicken chili as you catch up with Mad Men season four. Nope. This tender cake-like cornbread is a pinch more elegant. A gently sweet treat you might serve at high tea with a gaggle of girlfriends (or low tea, depending upon the company you keep). Picture fresh cut flowers on the table, stemmed glasses filled with dewy fresh berries, a pot of Earl Grey tea or organic chamomile buds steeping beneath a cozy.

This is the sort of cornbread that begs to be served with style. That longs to be gussied up. The kind of cornbread you eat with a fork.

A cornbread that secretly dreams of being cake.

My intrepid husband slash sous chef was craving a carrot cake style quinoa bar for a mid-morning snack. To be exact, he said, Hey. I'm craving a carrot cake style quinoa breakfast bar. You know. For breakfast. To which yours truly replied, Look who wants to get fancy. My chocolate chip quinoa breakfast bars aren't good enough for you? Now you need frosting? To which said long suffering husband replied, Frosting makes everything better.

Who am I to argue with that?

Is this the week to shun dessert in favor of lettuce? I can answer that.
The answer is no. As in N. As in O. NO. Nope. Nada. Not gonna happen. Because I, my darling, am a temptress. I am not going to write about New Year's Hoppin' John today, or some virtuous legume soup with kale. I am going to tease you. I am going to lure you- with one more fork-worthy dessert recipe before the final eve of 2011. A silky, creamy pumpkin cheesecake recipe that begs for a party. One last hurrah before the pale glare of January dawns in all her cold and sober glory. One last indulgent sweet before I gingerly step on the reality check scale. And maybe, sigh. A little hint of a sigh.

Because the annual jean shrinkage has begun. You know- that time of year when (mysteriously!) my jeans come out of the dryer a size too small. And that familiar jolly pie roll affectionately known as Doris is rolling her merry way up and out of my favorite roomy cargo pants. It's rather comical. And in truth, she makes me smile. I pat her affectionately. Like a pet bunny.

Because the truth is I am not about to start counting calories.

It's a simple, sugar-free recipe based upon a childhood favorite- the peanut butter and banana sandwich.

Karina's Chocolate Truffle Cake

Truffle Cake is a flourless chocolate cake worthy of Spring.

The intricate lace of bare oak branches reaching to the piece of schoolyard sky framed by my kitchen window is softening, filling in with bursts of tender green leaves so young and sweet you miss them at first glance. Spring has arrived. The oaks say so.

To celebrate the season of reawakening, I say we bake a cake.

Yes, another cake. I know, I know. I baked a luxurious Coconut Layer Cake for you just last week. But. It was a cake with flour (albeit gluten-free flours). And what do I feel like baking this week? A flourless cake. A cake so rich it tastes like a truffle. Not the infamous pig snuffled treasure. No, Darling. The chocolate truffle. That heavenly impostor, hiding in the guise of that woodsy French piggery fungi. Spoonfuls of deep, dark ganache rolled in cocoa powder (to look like dirt, of course).

And I didn't want just a chocolate cake topped with ganache, either. I wanted to bake the ganache itself. I wanted the cake to taste like a sweet and satiny truffle- I wanted the cake to live up to its name. Truffle Cake inspires expectations. So I fiddled around with my Flourless Chocolate Cake recipe and rustled up a divine and creamy chocolate cake so special you'll want to share it with company. It's simply too good to keep to yourself. Try it. It's shockingly easy to make. Just give yourself time to make it ahead. It is at its best chilled overnight.

Silky satin chocolate cake with a dusting of dirt- I mean- organic cacao powder with a secret ingredient. Raw maca powder.

Throw in a little superfood magic. Why not?

Birthdays are complicated when you reach a certain age. Oh, don't get me wrong. You're grateful for another year. I mean. You're still alive and kicking, right? Waking up to a fresh start. Starting a spanking new year on the planet with one more number under your (slightly pinching) belt. A number that grants you a whisker more authority in the world. A tad more wisdom.

If you've been paying attention to the lessons life likes to offer up as experience, and not sleepwalking, that is. Not acquiescing to the expectations of others. Or choosing safety over the challenge of the new. Or worse- finding yourself somewhere, in some situation, or relationship, strictly for the sake of momentum, chafing inside a role you don't remember signing up for.

Birthdays can be markers like that.

Defining where we've been. And how far we've come. Or not.

It was my husband's birthday this weekend. And yes, I baked a cake. And as I stirred the batter and scooped it into cake pans, I thought about the other cakes I have baked for him. The chocolate cake in our first year of marriage. Children beneath our roof. Blue balloons and candles. The newness of each others' dreams. The shine of our ideas. The belief in what was possible.

Apple Cake with Cranberries

No philosophy today. Instead, a cake. A beautiful gluten-free cake to bake for the holidays- or any day you feel like celebrating. So dust off your cake pan, Babycakes.

This is a moist and tender apple cake laced with a hint of cinnamon and studded with fresh tart berries. After seven eight nine years of baking various gluten-free incarnations of my tried and true Jewish apple cake recipe, this could be our favorite. Maybe it's the sweet-tart combo. The subtlety of flavors. In a food culture obsessed with kicking up recipes with more for the sake of more (white chocolate peanut butter bacon swirled maple mouse drizzled in dulche de leche coconut marshmallow and dusted with sugared lime zest and shaved dark chocolate, anyone?) the clean and classic flavor contrast of apples and cranberries is somehow new again. Even, refreshing. 

I don't need dessert to taste like candy. I like my cake to taste like cake.

Sometimes in life- when you least expect it- the stars are kind. Synchronicity smiles. And disparate pieces of your dreams bump up against one another and nestle snug into place. I'm referring, of course, to my dream of California. Summer by the Pacific, walking the beach, shopping the Farmers' Market, reuniting with my sons. Cooking. Writing. Haunting book stores and coffee shops.

I've been trying to get there for two years.

No, the house hasn't sold yet. But Plan B is under way. We found the elusive summer rental. Just when I thought it wasn't going to happen. A sublet in Santa Monica. In the nick of time. A lovely, light filled creative space. With a sweet kitchen. So I am back to making lists, mapping our drive south to Flagstaff, AZ, turning west to aim for the coast. I am lying in the dark alert, at 3 AM, pondering not the mysteries of the collective unconscious, not the properties of desire and effect, quantum attraction and Zen detachment, but favorite flavors of chocolate chip cookies. I am imagining herbed sandwich wraps (recipe soon!). Bags of salted popcorn. iTunes playlists. And this, a new blueberry cake recipe I felt inspired to bake. With a cinnamon crumb topping.

I think it's perfect to pack for a two-day road trip, don't you? Or even a two minute trip, scooting across the back yard barefoot to visit your best friend and neighbor. She'll make the coffee. Or iced chai. While you unrap the cake you get to eat, too.

Gluten-free Peach Cake

Lazy summer days are sweet and sticky jewels studded with fresh cut fruit and juicy cakes. Farmers' markets buzz with color and scents. And peaches are the star. Get them while you can, Gentle Reader. Inhale their ripe velvet voluptuousness. Because all too soon they will be gone, and the stony, flavorless winter impostors picked well before ripening, thrown into crates and imported from far off orchards flirting with the southern hemisphere sun will be posing at your market as peaches. But they are not. And they know it.

They don't even try to pretend.

So grab your baskets and get thee to a local farmers' market. There is peach cake and peach crisp, and peach ice cream to be savored.

Some of you may recognize the basic recipe here. It's one I've posted and tweaked. It's not in my nature to follow directions or repeat a success without tweaking it, you see. I just can't do it. My brain chemistry switches to Bored Beyond Belief faster than you can mutter the words peach pancakes on a stick.

Let's just say I was a challenge in school. And in jobs (and okay, relationships) requiring a set routine or specific schedule. Rules and expectations writ in stone give me the itch to break free and play, What if? I just can't do the same thing over and over. I get too restless. I get punchy. And I'm also a big believer in change.

Change is good.

Change means I'm alive, growing and learning. Change means I'm curious, taking a risk, discovering something I didn't know before. Experimenting and sometimes failing or looking like an idiot often comes with the territory. Sure, I might end up feeling inept or totally stupid. Born too late. Or too soon. But will that keep me in my proper place and tame my wanton right-brained ways?

Not on your life, Babycakes.

Vegan Flourless Chocolate Cake

A deep dark chocolate cake recipe. Just in time for Valentine's Day. And the best part? It's not only gluten-free, but vegan as well. And it's technically a flourless chocolate cake (which for some retro-fueled reason still conjures the term sexy thanks to Sarah Jessica Parker).

In full disclosure (hey, I vet my recipes okay?) I added a scant amount of buckwheat flour to help it set up without eggs, but buckwheat isn't technically a grain, is it? More of a groat, a fruit kernel. In fact, buckwheat is a cousin to sorrel and rhubarb. I could try to impress you with shout-outs to the Polygonaceae family, dropping botanical distinctions like actinomorphic and calyx as fast as Madonna drops post-Guy Ritchie boyfriends, but I'd rather leave all botany urges behind and get back to chocolate and celebrating the dream of true love. 

All in the nick of time for Valentine's Day.

But what, exactly?

Ripe bananas were calling. Begging to be a part of some grander life affirming tastebud tingling scheme. But do readers really need another banana cake recipe? I pondered, slurping cold coffee with vanilla hemp milk. Which reminds me. I should share this.

Fall is my favorite season- for more reasons than I can count. Clear cool mornings that reinvigorate my affection for walking- not to mention- turning on the oven to bake. The freshened sense of new beginnings- yes, I know, I'm weird this way. Rather than the greening of spring, it's the winged migration of fall that kindles my creative spirit.

Fall feels like a fresh start, the smell of sharpened pencils, crisp white sheets of paper and a new box of crayons. Time to stack unread books by the bed, recycle old clothes, worn out paradigms and old ideas.

Time to get the broom and make a clean sweep of things.

Vegan (egg-free) baking is a mega-challenge at high altitude. Throw gluten-free and dairy-free into the equation (not to mention, soy-free, Darling- I can't even rely on tofu yogurt!) and trust me, it can be a major pain in the proverbial butt. I've dumped two previous egg-free incarnations of this recipe lickety-split into the trash. Today, however, I tweaked again. And guess what? We have a winner.

So- this one's for all you lovely celiacs, gluten-free vegans, multi-allergic sweethearts and autism spectrum angels out there (neurodiversity rocks, after all).

The shy one no one notices, lost in the shuffle and glitz of more charismatic confections. She may not ever be the center of attention or the one you call upon to impress your boss, but she's the one you turn to when you need something satisfying and real. Comforting.

And like lasting friendship that doesn't care about the superficial- if your shoes are out of style or your nails remain unmanicured- she is lovely sharing a mug of tea.
