3 cupcake meetups, 3 cities: Chicago (tomorrow, St. Patrick's Day!), Brooklyn, Seattle

BabyCakes NYC Launches Cupcake Cake Art of the World contest

From the latest BabyCakesNYC newsletter and their blog:
It’s real easy: Make a cake using the BabyCakes mixes and frosting and decorate it with whatever Spring-inspired splendor you can imagine—there are no rules limiting your creative hankerings. Then, by April 19th, send a picture of this masterpiece to contest@babycakesnyc.com, along with your name, city and state, and what you are calling your cake. You can then consider yourself entered in the inaugural BabyCakes Cake Art Contest of the World! (If you want to send a photo of yourself as well, cool!)

We’ll set up an online gallery where your friends and loved ones can vote your cake into prize territory. The first place winner will receive a $100 BabyCakes gift certificate, both BabyCakes cookbooks, and an official BabyCakes apron exactly like those that the bakery bakers wear. There are also prizes for 2nd and 3rd place winners, because that seems fair.

Cupcake Wars: Vegan Bake Off

Did you happen to catch last night's new episode of Cupcake Wars? Well just in case, let me recap for you!

Last night's episode of Cupcake Wars was the first all vegan episode! The bakeries were competing for the opportunity to serve their delicious and animal friendly treats at the Inaugural L.A. Green Festival.

The competitor's for this episode were:

New Cascadia Traditional from Portland, OR

Michy's Foods from Los Angeles, CA

Bliss Cakes by Stephanie Sparkles from Venice, CA

Two Birds Baking Co. from Huntington Beach, CA

ROUND ONE:
This round challenged the bakers with locally grown fruits and vegetables, including but not limited to: clementines, sage, lemongrass, fennel, red peppers, coconut, avocados, etc.

NCT: Chocolate cake with sweet pepper lemongrass filling, avocado icing, vegan ganache and edible sprinkles. Also, this cupcake was gluten free. The judges were unanimously underwhelmed.

MF: Fennel cake, clementine buttercream with a candied sage leaf on top. All the judges loved the bright and fresh clementine flavor of the buttercream and creative nature of the fennel cake but were not too thrilled with the sage merely being a piece of decor.

BC: Corn cake, speckled with sweet red pepper, topped with creamy sage frosting, topped with parsley to lighten up the flavor and sweet red peppers. Judges loved the surprise of the cupcake being sweet over savory but again cautioned the use of the required third ingredient as a garnish.

TBBC: Clementine fennel cupcake, vegan vanilla buttercream frosting, with balsamic glazed figs on top. The balsamic reduction overpowered all the other flavors in the cupcake.

Eliminated: Two Birds Baking Co.

ROUND TWO:
This round challenged the bakers on showcasing "living green" through their cupcakes. As we all know in this round judging is based on 50% taste and 50% presentation.

NCT: Chocolate Cupcake with Chocolate Orange Frosting and topped with chopped hazelnuts
Molasses Spice Cupcake filled with Apple Butter topped with Cinnamon Molasses Icing
Zucchini Raisin Cupcake with Ginger Nutmeg Cream Cheese Icing.
Judges: Delicate decorations but not WOW for the second round. Overall taste was delicious.

MF: Apple Cinnamon Cupcake filled with caramel, topped with Cinnamon Buttercream, Caramel Drizzle and crushed peanuts.
Gingerbread Cupcake with Cream Cheese Frosting topped with crushed gingerbread cookies
S'mores Cupcake filled with a marshmallow with Chocolate Ganache, toasted marshmallow and crushed graham crackers.
Judges: Mixed review on the decor. Mixed reviews on the technical aspects of cupcakes (cook times).

BC: Matcha Vanilla Raspberry Cupcake with Matcha Green Tea Frosting topped with a raspberry and mint leaf
Mayan Spice Chocolate Cake with Cinnamon Cream Cheese Icing
Tangerine Poppyseed with Lavender Frosting, Coconut Cream filling and fresh tangerines and lavender flowers on top.
Judges: Decorations = LOVED. Cupcakes were a bit over baked, too much going on in the Lavender cupcake, suggested removal of the coconut cream.

Eliminated: Michy's Foods

ROUND THREE:
Create a 1000 cupcake display for the event.

NCT: Display was tree-like cupcake tiers made up of reclaimed wood done in an upwards manner making the display 360 degrees
accessible.

BC: Display was imagined off of a vertical cupcake garden. Made up of recycled wood, bamboo, fresh herb garden below, the piece can be reused after the event as a real vertical garden.

WINNER: Bliss Cakes by Stephanie Sparkles


This was a more interesting episode of Cupcake Wars. As bakers and foodies, we're always learning new methods of cooking and new things to try. This episode definitely showcased the intricacies of vegan baking and really opened me up to trying out some vegan recipes for myself!

So much fun at Georgetown Cupcake, plus gluten free lava fudge gooeyness

We had so much fun at yesterday's meetup at Georgetown Cupcake in SoHo! Owners Katherine and Sophie were there working so we got to meet them, and we tried lots of flavors, including peanut butter fudge, strawberry (which was amazing and a definite favorite among us), lava fudge, black and white, red velvet and carrot. Here's a few photos; proper review coming as soon as I can.

I wanted to highlight the fact that they not only sell a beautiful gluten free cupcake, gluten free lava fudge in this case, but that it was delicious, with that liquidy chocolate oozing out from the inside, a very fresh cake (as were all of them) and delicious frosting. I hope it doesn't offend anyone who can't eat gluten, but when I like a gluten free cupcake, it's usually those where I can't tell the difference, and in this case, I couldn't at all. I didn't do a side by side comparison but I did also try a regular lava fudge and both were great. Visit georgetowncupcake.com and stay tuned here and at our meetup group for our next NYC event. Recipe and Giveaway (!): The Complete Allergy-Free Comfort Foods Cookbook


 I'm loving these vegan allergen-free frosting recipes from Elizabeth Gordon's new cookbook, The Complete Allergy-Free Comfort Foods Cookbook.  Every recipe is free of gluten, eggs, soy, nuts and dairy, perfect for those on a gluten-free diet, those who suffer from Celiac disease, or those who prefer a dairy-free diet.

Chocolate Ganache Frosting

10 ounces gluten-, dairy-, soy-, nut-, and egg-free semisweetchocolate chips
1 tablespoon Lyle’s Golden Syrup or corn syrup
1⁄3 cup well-shaken canned coconut milk
1⁄4 teaspoon espresso crystals
1 cup sifted confectioners’ sugar
1 tablespoon canola oil

Makes 11⁄2 cups

1. Place the chocolate chips, Lyle’s Golden Syrup or corn syrup, coconutmilk, and espresso crystals in a small saucepan. Stirring constantly, so as notto scorch the chocolate, melt the mixture over low heat.
2. When the chocolate is two-thirds of the way melted, remove fromthe heat and continue stirring until it is completely smooth. When the ganacheis completely smooth, beat in the confectioners’ sugar and canola oil with ahand mixer until a thick, smooth frosting has formed.
3. Leftovers may be stored, refrigerated, for up to 5 days. Let thefrosting stand at room temperature until it is soft enough to spread.








Supermarket Frosting


3⁄4cup organic palm fruit oil shortening
1⁄3cup powdered vanilla rice milk
5cups confectioners’ sugar, sifted
1⁄4cup plus 1 tablespoon water
1⁄2teaspoon salt
1teaspoon vanilla extract

Makes 3 cups

1. In the bowl of a stand mixer, cream the organic palm fruit oil shorteningand the powdered vanilla rice milk until they are light and fluffy.
2. Stir in the confectioners’ sugar 1 cup at a time. The mixturewill be crumbly.
3. Slowly stir in the water, salt, and vanilla extract and thenbeat the frosting for 3 minutes on medium high.
4. Use the frosting immediately or store it in an airtightcontainer with plastic wrap pressed directly on top of it in the refrigerator for3 to 5 days or, in the freezer for up to 3 months. Thaw the frosting completelyand beat it again before using.
