These are some of the coolest cupcakes I've ever seen! They're by blogger Craftstorming, who has the recipe and writes: "Below the white chocolate shell is a fluffy rainbow of marshmallow icing and hidden below that is a pot of ‘gold’ caramel. Swirlz in Chicago, where I'm posting this from, has free Jameson shots out for St. Patrick's Day and some mini cupcakes to try. All the cupcakes I tasted were delicious, especially the gluten-free Twixie cupcake, which has chocolate cake, a layer of melted chocolate, a layer of shortbread cookie, salted caramel buttercream, drizzled with homemade caramel, and the Thin Mint cupcake, which has chocolate cake, with a layer of chocolate, homemade chocolate sugar cook, mint buttercream (that was extra smooth and light) and hand-dipped in chocolate, and the vegan, gluten-free mint chocolate chip! Lemon Shamrock Cupcakes

I love the shamrocks on these cupcakes! Barbara Bakes made these lemon cupcakes with lemon cream cheese frosting and topped them with green sprinkles and shamrocks made out of green gum drops. I've seen these made two different ways. You can either cut the gums drops into slices, or roll them out with a rolling pin and cut out the shapes. Either way, they'll probably look super cute. I'm heading to Chicago this weekend for my cousin's wedding, an am looking forward to trying cupcakes I can't get at home. I like the cupcakes at Sugar Bliss Cake Boutique, and the fact that they offer mini cupcakes along with regular size, and I especially like that they rotate their flavors so there's always something new on the menu. Serving the cupcakes up in jars means the frosting can be creamier and I added a lot more of that whiskey chocolate ganache this way. I love the way they turned out in the glass with the frosting on top... almost like little pints of Guinness.

These friends play together beautifully and are three of the five ingredients in the espresso martinis that I love.

Bailey’s is creamy goodness. Frangelico is hazelnut-flavored liqueur and Crème de Cacao has a light chocolate flavor.

For the cupcakes, I substituted the liquid ingredients in the batter with two espresso martinis. Texturally, the recipe works but the intensity of the alcohol needs some refining but what I came up with for the icing is absolute perfection and I’d like to share the Irish love with you and how to decorate the shamrock cupcakes.
