Some of the most beautiful flower cupcakes I've ever seen
I feel like I should be jaded about flower cupcakes by now, after probably seeing hundreds, if not thousands of them, but I'm not, just as I'm not jaded about real flowers. Pretty rainbow cupcake plus recipe link
Want to know how to make these rainbow cupcakes, for St. Patrick's Day or otherwise? Head on over to food blog The Curvy Carrot for the recipe! She writes:
As far as the cake goes, use your favorite white cake recipe, divide the batter into several small bowls, and color each bowl with your desired food coloring gels. I decided to try a white cake recipe from King Arthur for this recipe, but, in all honesty, I will most likely go back to my favorite from Baking Illustrated (see the recipe here) because I like the spongy texture (and the more potent almond flavor.) better. And for the frosting? I was running low on vanilla extract, so I threw in some butter flavoring instead. Holy moly. If you want a buttery buttercream (and who doesn’t, really?), try this if you happen to have some on hand. It’ll knock your socks off.

Pretty Mardi Gras cupcakes with cinnamon frosting
The Mardi Gras cupcake love continues; these colorful Mardi Gras cupcakes are by blogger Erica at Sweet Tooth, who shares her cake mix recipe, and used the cookbook Hello, Cupcake! as inspiration and adapted the Fake Ginger recipe for her cinnamon frosting. Erica writes:

They were extremely festive -- I love the vibrant colors of mardi gras and I was able to dump a whole lotta food coloring into the batter so that they baked brightly. Everyone was completely stunned how I was able to make the 3 colors so distinct, but all it took was a few spoons and a little finesse. Cupcake batter is not that runny, so when you spoon out a bit into the liner, it'll hold its place as long as you move quick to put in the next color. The result is so fun -- the possibilities of color combination make them perfect for just about any occasion.

as a chocolate and peanut butter fan, this one's my favorite looking! From this post:
I made devil’s food cake in the mini muffin tins. Then I whipped up a creation for the frosting of Jif Chunky Peanut Butter, Confectioners Sugar, Butter, Milk and Vanilla. I chose to use the crunchy for a little bit more texture but creamy would work just fine! Instead of using a piping bag and tip (because of the chunks) I put the frosting in a zip lock bag and cut the end off. It worked great!
To get the chopped up Reeses Peanut Butter Cups, I used the minis. Stick them in the freezer for 10-15 minutes so they are easier to chop.
