Stop everything and check out these rainbow hi hat cupcakes
These are some of the coolest cupcakes I've ever seen! They're by blogger Craftstorming, who has the recipe and writes: "Below the white chocolate shell is a fluffy rainbow of marshmallow icing and hidden below that is a pot of ‘gold’ caramel. Continuing with all things Irish the dark chocolate cupcakes contain whiskey." Wow!! Via Flickr.

How to make St. Patrick's Day very bright rainbow cupcakes with buttercream shamrocks: video, plus Cadbury Creme egg, Glee and Beatles cupcakes
This is a detailed 12-minute video about how to make very bright rainbow cupcakes for St. Patrick's Day, by blogger Jennifer Johns of Cupcakes, Cookies and Cardio (what a great name!). She also has her own business, JJ's Custom Cakery, so if you don't want to make them, you can order your own in Cranbrook, British Columbia, Canada by contacting jenn at jjscustomcakery.com or 778-517-1415. You can see more photos on Facebook. (They also showed us how to make the popular Valentine's Day heart cutout cupcakes in a video)
This is how bright they are, at least when made by JJ's Custom Cakery (and you, presumably, if you use the right amount of food coloring):

Pretty rainbow cupcake plus recipe link
Want to know how to make these rainbow cupcakes, for St. Patrick's Day or otherwise? Head on over to food blog The Curvy Carrot for the recipe! She writes:
As far as the cake goes, use your favorite white cake recipe, divide the batter into several small bowls, and color each bowl with your desired food coloring gels. I decided to try a white cake recipe from King Arthur for this recipe, but, in all honesty, I will most likely go back to my favorite from Baking Illustrated (see the recipe here) because I like the spongy texture (and the more potent almond flavor.) better. And for the frosting? I was running low on vanilla extract, so I threw in some butter flavoring instead. Holy moly. If you want a buttery buttercream (and who doesn’t, really?), try this if you happen to have some on hand. It’ll knock your socks off.
