Stop everything and check out these rainbow hi hat cupcakes

These are some of the coolest cupcakes I've ever seen! They're by blogger Craftstorming, who has the recipe and writes: "Below the white chocolate shell is a fluffy rainbow of marshmallow icing and hidden below that is a pot of ‘gold’ caramel. Marshmallow Flower Cupcakes


I consider myself an amateur baker because I've never had any training and I've never taken any classes. Everything I've learned about baking has come from my mom and books. Sometimes the hardest part to teach myself is decorating. What I love about these cupcakes is that they look fancy, but they're really easy to decorate. 5 Lucky Charms cupcakes for St. Patrick's Day plus recipe links and cereal history facts

With St. Patrick's Day coming up on March 17th, and being that Lucky Charms is one of my favorite cereals (though I tend to pick out the marshmallows and eat them first), here are 5 Lucky Charms cupcakes to get you in a celebratory mood.

The icing is homemade buttercream. The cupcakes are topped with a little green sugar and then, of course, the Lucky Charms! From reading the reviews on the Betty Crocker website, I already knew that the cereal will quickly go stale if not served immediately. I tried using meringue powder in the icing and a layer of green sugar on top of the icing to possibly help prevent this, but no luck. The cereal did stay crunchy for an hour or two, but after a couple hours the cereal and marshmallows did get soft. They still taste great, but it is just as easy to put a handful on Lucky Charms on top right before serving. They are definitely best with that nice crunch on the top!

Last but not least, the very awesome With Sprinkles on Top has a Lucky Charms cupcake recipe and news about where you can buy just the marshmallows (from a site called, appropriately enough, cerealmarshmallows.com, via CHOW) and fun facts about Lucky Charms gleaned from Wikipedia, including:
  • The original cereal contained pink hearts, yellow moons, orange stars, and green clovers.
  • Blue diamonds were introduced in 1975, purple horseshoes in 1984, red balloons in 1989, rainbows in 1992, pots of gold in 1994, leprechaun hats in 1996, orange shooting stars in 1998 (other colors of shooting stars were added in 2011), and an hourglass in 2008.
  • Older marshmallow shapes were gradually phased out; the pink heart is the only shape to survive since the beginning.
  • Limited edition marshmallows were also added over the years — including a whale in 1986, pine trees in 1990, a red balloon with a gold star in 1991, and a sparkling rainbow in 2000.

A s'mores cupcake I didn't love, from House of Cupcakes

I am inclined to like all things s'mores, so when I have a s'mores cupcake that I am not that smitten with, it's disappointing. Yesterday I stopped by Cupcake Wars winners House of Cupcakes, which is a cute cupcakery in Princeton, New Jersey. I got a box of six cupcakes for $11.25 (buy 5, get one free) and I'll post about the others separately, but the s'mores just didn't do much for me. The chocolate cake was crumbly and not that flavorful, the frosting was extremely, extremely sweet and didn't taste much like marshmallow or s'mores. I don't know exactly what the candies on top are, but they were crunchy and sweet and wound up being my favorite thing about this cupcake. I know for some people the idea of marshmallow anything is just too much for them, and usually I'm the one sticking up for marshmallow, but in this case, I didn't love their s'mores cupcake. The salted caramel frosting and espresso brownie cupcakes I did enjoy though. Mint chocolate Cthulhu, Zelda red velvet, Carcassonne, chess and many more game cupcakes by Geek Sweets at Game Summit 2012

Who better than Ottawa, Canada's custom dessert maker Geek Sweets to attend the Game Summit 2012 and make special cupcakes? These are just a few of Geek Sweets' special geeky cupcakes. I am not a gamer and hardly know what many of these are (I had to Google Cthulhu and Carcassonne), but I still think they're awesome and love that they were at a gaming convention.

As a chess player, that one is my favorite. And s'mores. S'mores forever; that's pretty much my favorite cupcake flavor ever so if there is ever a s'mores cupcake I spy, I will eat it. Or, in this case, blog it. The last one is an homage to Hello Kitty, and maybe doesn't exactly go with the rest visually or thematically, but is so adorable and looks like I'd love it that I couldn't pass it up. It's "a strawberry whipped cream filled, strawberry marshmallow frosted fluffy vanilla cupcake" called "The Hello Kitty." All via Geek Sweets on Facebook and on Flickr. Amazing rainbow cake pops inside and out and recipe link

Talk about colorful and over the top and awesome! Blogger Munchkin Munchies is determined to cheer you up with these extra bright, bold and fun rainbow cake pops, and has the recipe. So fun! There are candy melts and marshmallows involved, too, along with (obviously) food coloring, and she promises that they taste as good as they look.

Sparkly s'mores cupcakes every which way by Amanda Cupcake

One of the things I'm most excited about regarding my first trip to Milwaukee, Wisconsin this weekend is getting to meet blogger and baker Amanda Cupcake of Waupaca, Wisconsin, who bakes up all kinds of sparkly cupcake and cake pop treats. S'mores is one of my favorite cupcake flavors and she does them in all kinds of ways, as you can see below: extra blinged out glittery cupcakes, cupcakes in jars, cake pops (okay, a marshmallow pop), ice cream cone cupcakes! I love her spirit and that on her about section on Facebook she describes herself as "Cupcake Artist/Chemist/Bringer of Happiness."

Honolulu cupcake excitement for tonight's meetup: chocolate mint marshmallow cupcakes by Tiramisu Cupcakes

I'm not sure which type of cupcakes Tiramisu Cupcakes will be bringing to tonight's Honolulu, Hawaii Cupcakes Take the Cake meetup, but I'm excited by this photo of their chocolate mint cupcakes! Tiramisu [Tir-a-mi-su]:What's in the name? In translation, tiramisu means "pick me up," or "lift me up". It is also the cupcake that started the YummyCups craze. As a former co-founder of YummyCups, I found it only "fitting" to name my new adventure after the cupcake (tiramisu).


I also like that they put a cupcake on the side of a cake!
