The cupcake recipe is a nice time-saver as it uses a chocolate boxed mix for the base with a few additions (still comes out super tasty!) and I paired it with my basic buttercream recipe with finely crumbed cool mint oreos and peppermint flavoring added in.


I used a funfetti cupcake mix, which made 6 cupcakes. I put one spoon of batter into the liner and placed the Oreo in and then placed another spoon of batter on top. I made half of this frosting recipe with some vanilla paste and no food coloring.

Atop a tender mini lemon cupcake(with coconut cream cheese icing)sits a nest of toasted coconut,gently cradling a tiny speckled chocolate egg.






Serving the cupcakes up in jars means the frosting can be creamier and I added a lot more of that whiskey chocolate ganache this way. I love the way they turned out in the glass with the frosting on top... almost like little pints of Guinness.









These friends play together beautifully and are three of the five ingredients in the espresso martinis that I love.
Bailey’s is creamy goodness. Frangelico is hazelnut-flavored liqueur and Crème de Cacao has a light chocolate flavor.
For the cupcakes, I substituted the liquid ingredients in the batter with two espresso martinis. Texturally, the recipe works but the intensity of the alcohol needs some refining but what I came up with for the icing is absolute perfection and I’d like to share the Irish love with you and how to decorate the shamrock cupcakes.

The fun thing about Oreos is that they are just the right size to sneak into the bottom of your cupcake liners before adding your cake batter. The cake bakes up perfectly leaving the Oreo at the bottom of the wrapper so its completely hidden. It is not until someone takes a bite into the cupcake do they discover the surprise of the cream-filled cookie inside and that extra burst of color from the green Cool Mint! I must say these go over great with the kids…it’s like they found a hidden treasure inside their cake!

You have to like peanut butter, obviously, cause there is a ton of peanut butter that goes into these cakes. But basically, this is a super moist peanut butter cupcake, with chocolate chips, and peanut butter frosting. I added the additional drizzled chocolate on top cause I felt like these cupcakes needed just a bit more chocolate.


It all started with a brown piece of LEGO®. To me it looked like a shiny cube of delicious milk chocolate. Wouldn’t it be great if it actually was chocolate? The cream coloured pieces could be sweet white chocolate and the glossy black pieces a rich dark chocolate. If only that were possible, I thought. Well, with the help of some magic blue stuff, I made my chocolate LEGO® dream come true. It was pretty simple to make them too.
However, once I had made my sweet chocolate specimens, they seemed a little small and insignificant. What I really needed was a vehicle to carry my chocolate LEGO® and lift them up for the world to see. So, I decided on a simple vanilla cupcake and some creamy vanilla icing as a platform for my glorious chocolate LEGO®. The problem was though, the vanilla cupcake idea seemed a little lame and boring. LEGO® is so fun and colourful, so I figured the cupcakes should be bright and vivid too. I saw this great idea, on a blog on Valentine’s Day, where the blogger made a cupcake with a red cake heart concealed inside. So I borrowed this idea, but modified it a bit. I placed a colourful LEGO® cake piece inside my cupcakes. Now, I really had a cupcake worthy of my chocolate LEGO® and all my LEGO® dreams were complete. I really have to stop imagining everything can be made into food….what next!










The icing is homemade buttercream. The cupcakes are topped with a little green sugar and then, of course, the Lucky Charms! From reading the reviews on the Betty Crocker website, I already knew that the cereal will quickly go stale if not served immediately. I tried using meringue powder in the icing and a layer of green sugar on top of the icing to possibly help prevent this, but no luck. The cereal did stay crunchy for an hour or two, but after a couple hours the cereal and marshmallows did get soft. They still taste great, but it is just as easy to put a handful on Lucky Charms on top right before serving. They are definitely best with that nice crunch on the top!
