Easter cupake cuteneess, or Peeps=fun!

Peeps. I love them! I don't tend to eat too many because one goes a long way but I like looking at them and think they make a perfect cupcake topper. See more Easter cupcakes like these at Food Network.

How to bake a LEGO® inside your cupcake for Double LEGO® Cupcakes!

Blogger S'tasty was inspired by toys and found a way to create these awesome Double LEGO® cupcakes that are so full of coolness I don't even know what to say. There's detailed instructions there on how to do your own. Oh, and the LEGO® pieces on top are made of chocolate and totally edible! S'tasty also has the recipe. We've seen hearts inside cupcakes, shamrocks inside cupcakes, what's next? I am always going to be enamored of anyone who can pull this off. Via Craftzine.

chocolate LEGO®s on top!

LEGO® shapes inside!

From the S'tasty post:
It all started with a brown piece of LEGO®. To me it looked like a shiny cube of delicious milk chocolate. Wouldn’t it be great if it actually was chocolate? The cream coloured pieces could be sweet white chocolate and the glossy black pieces a rich dark chocolate. If only that were possible, I thought. Well, with the help of some magic blue stuff, I made my chocolate LEGO® dream come true. It was pretty simple to make them too.

However, once I had made my sweet chocolate specimens, they seemed a little small and insignificant. What I really needed was a vehicle to carry my chocolate LEGO® and lift them up for the world to see. So, I decided on a simple vanilla cupcake and some creamy vanilla icing as a platform for my glorious chocolate LEGO®. The problem was though, the vanilla cupcake idea seemed a little lame and boring. LEGO® is so fun and colourful, so I figured the cupcakes should be bright and vivid too. I saw this great idea, on a blog on Valentine’s Day, where the blogger made a cupcake with a red cake heart concealed inside. So I borrowed this idea, but modified it a bit. I placed a colourful LEGO® cake piece inside my cupcakes. Now, I really had a cupcake worthy of my chocolate LEGO® and all my LEGO® dreams were complete. I really have to stop imagining everything can be made into food….what next!

Mini pancakes piled high with maple syrup frosting on cupcakes plus recipe link

Apparently, it's Pancake Day, so Happy Pancake Day! That one passed right by me, but it did not escape the notice of blogger Butter Hearts Sugar, who made these piled high with pancakes cupcakes and has the recipe!

From the post:
While eating cupcakes for breakfast is not new to me I get that some people might get bit funny about it. With these cupcakes there's no need to feel bad about having them for breakfast or if you look at it the other way around, having pancakes for dessert. These cupcakes are so super quick and easy to make and turned out beautifully, light and airy just like perfect pancakes should be. I couldn't have pancakes without syrup and cupcakes without frosting, so each little cake was finished with some buttery maple syrup frosting and a mini stack of pancakes.

Big yellow taxi New York cheesecake cupcake at Georgetown Cupcake SoHo

I'll post later about how much I loved the new Georgetown Cupcake SoHo (see Stacie Joy's post about launch party), and more details about their blinged-out mixer, but a short post for now about their cheesecake cupcake, one of many flavors they sell. Below are details about Sunday's meetup there from 2-4 pm. One thing I love is that they have different flavors daily. I've circled the ones I want on the handout they give you, so I know when to come back for which ones. I have a feeling I will be back very often (like today, tomorrow...) because there are so many I want to try! Georgetown Cupcake, 111 Mercer Street, NYC. Visit georgetowncupcake.com for more information.

The cheesecake was good, though I'm not really a cheesecake fan, so a true cheesecake lover could tell you more. I liked the way it looked and it was smoothy and creamy. I bought this one ($2.75) mainly because I liked that it was New York specific. It was a bit crumbly, and had a graham cracker crust on the bottom. I'm not sure what the disk on top was made of but it was very sweet; edible, but I'd say leave it for decoration. If you like cheesecake, I recommend this; they also had cheesecake cupcakes with Broadway street signs on them.
