Meatless Mondays with Martha Stewart - Crusted Jerusalem Artichokes with Beluga Lentils, Kale, and Harissa



Jerusalem artichokes. Quite the mouthful of a name for such a little tuber.
If you're like me and slightly perplexed by this veggie, you'll be happy to know I've found a delicious way to cook them up, combined with beluga lentils, kale and fiery harissa dressing. It's a mid-winter, kick-in-the-pants, party-on-a-plate! What's more, it's a breeze to prepare and loaded with protein, fiber, super-charged minerals, and of course, tastiness.

Meatless Mondays with Martha Stewart - Root Vegetable Mulligatawny


It’s week 2! I hope this finds all you detox-ers out there feeling like superheroes because, well, you are.  I am totally overwhelmed with the response from the last post to see just how many of you are actually participating in the cleanse right now, and the number who are planning to give it a go in the coming weeks!  It truly warms the cockles of my detoxed heart.

Now that we’re introducing lean proteins back into our meals, we will be able to fully indulge in this scrumptious Root Vegetable Mulligatawny. And if you’re a Seinfeld fan, you will be familiar with this dish from the infamous Soup Nazi – it’s admittedly the first time I heard about Mulligatawny. Who says we can’t learn anything valuable from pop culture? That episode successfully infused me with a deep curiosity for this rich, Anglo-Indian soup, and has inspired many a dinner since.

I love this soup because it is versatile (there really isn’t “one” defined recipe for it, so you can customize it to suit your tastes), it is incredibly filling, easy and inexpensive to make. My version uses seasonal root veggies and the traditional red lentils, all bobbing around in a golden coconut broth. It’s like eating a hug – which I figured you all deserve right about now.

Meatless Mondays with Martha Stewart - Vegan Chanterelle Cream Soup



This is my first official soup of the season - a most luxurious cream of chanterelle without the cream. How is this possible? You'll have to check out the recipe to discover my sneaky little secret.

If your palette needs pleasing and your belly needs warming, this is the dish for you. Perfect after a weekend of Thanksgiving indulgences!

Meatless Mondays with Martha Stewart - Lemony Leeks with Chickpeas and Feta



Hey friends,
Guess what happens when you put a bunch of leeks in a pan with some veggie broth? Surprisingly, a totally mind-blowing flavour fest. Then guess what happens when you add lemon zest, dill, garlic, olive oil, goat feta, chickpeas, and lots of cracked black pepper? I'm not even gonna go there - use your imagination.

This was one of those last-minute throw together kind of lunches that honestly, I didn't expect much from. I mean, how awesome can leeks possibly taste?

Meatless Mondays with Martha Stewart - Green Olive Tarragon Tapenade + a Really Good Sandwich



Hey friends! It's Meatless Mondays over at Whole Living again. 

This time I've come up with a very tasty green olive tapenade that makes friends with just about anything it touches. Get a handle on this: plump green olives, roasted hazelnuts, salty capers, tarragon, lemon...divinity! And the best thing I've made with it? This roasted beet and arugula sandwich. Yes, I love a good red beet and goat cheese pairing, but this combo breaks with convention and is unexpectedly delicious. Give it a try. Here's the recipe.

Meatless Mondays with Martha Stewart - Rhubarb-Lentil-Sweet Potato Stew



Yea, I kind of had to make another dish with rhubarb. I may be obsessed.
This time I took the savory route, after an inspiring recipe afterthought from Michael Bittman's How to Cook Everything Vegetarian. I gave it a little Sarah B twist with some sweet potato goodness and a cilantro oil for drizzling. It's an all-together-unexpected-delight that is sure to silence the cynic in you.

Meatless Mondays with Martha Stewart - Asparagus Ribbon Salad



Doesn’t the mere sound of it conjure up delightful notions? Asparagus Ribbons. Say it again.
Nice.

This is one of the easiest salads I’ve made in a while – it whips up in no time and the flavour is bang on. Plus, no pots to clean, no hot stove to slave over. It’s a sophisticated-without-being-stuffy spring salad to savour. Enjoy.

Meatless Mondays with Martha Stewart - Homemade Socca



It’s Meatless Mondays once again!
This week I cooked up something really special and unique for good ol’ Martha – a southern French indulgence called socca. I can’t quite believe that I have never cooked, tasted, or even heard of this incredible food before, which is essentially a chickpea-flour pancake. It is a hearty, nutritious, and filling snack, that can easily be turned into a meal by tossing on whatever toppings you have laying around. I used some sliced avocados, kalamata olives, and spring greens, along with a generous drizzle of olive oil, lemon juice, sea salt and freshly ground pepper. The purists would surely take offense to my liberal use of garnishes, but you know what? I’m just crazy like that.

There are a few reasons why I am so stoked about socca, the first being that it is probably one of the easiest things to prepare, ever (not to mention impressive). It is also naturally gluten-free, vegan, high in healthy carbohydrates and protein. And I am even more excited by the versatility of socca, as this could surely replace nutritionally-void pizza crust, sandwich bread, crackers, pitas and the like. How amazing is that? I am so totally sold on socca. Oh, and did I mention how delicious it is? It’s like crack!

Meatless Mondays with Martha Stewart!



It sure has been tough keeping this one a secret, but I’ve been asked to write the inaugural article for Martha Stewart’s Whole Living online magazine’s new Meatless Mondays blog! Whew! Did you follow that? Translation: awesome. We’re talking about me (me!?) contributing to a domestic empire that undoubtedly shaped my young life. How else can you explain my obsession for herb gardening, or pickling, or hand-crocheting my own lace doilies? It’s all Martha’s fault for sure. And now I’m officially joining the club.

First, let give you the low down on Meatless Mondays, because it really is a rad idea. In 2003 Meatless Monday was created as public health awareness program to help Americans reduce their risk of preventable disease by cutting back saturated fat. Now, it’s touted as a way not only to better one’s health, but also better the health of the planet. According to the Bloomberg Johns Hopkins School of Public Health, if all Americans skipped their daily 8 ounces of meat just one day per week, we could save more emissions over the course of a year than if we gave up traveling by cars, trains, planes, and ships combined. Imagine that! Even though you’ll never catch me preaching about vegetarianism, I will say that by cutting back on meat consumption, even once a week, you are making a huge difference inside your bod and outside in the world.

So, back to me. Heh. Not only do I have the esteemed privilege of writing the debut article for Meatless Mondays, I will be contributing a monthly piece with original recipes, helpful and healthful information, and everyone’s favorite…food porn. Yay! I’ll make a note of it here on My New Roots so you don’t miss a single Meatless Monday, but you should check out Whole Living Magazine online in the interim. It is so crazy-packed with solid health info, recipe ideas, fitness plans, stress reduction tips and detox advice...the list is endless! I guess I wouldn’t be bragging so much if it weren’t something very special indeed.



The recipe this month features Healthy Spaghetti with Sweet Potatoes, Cherry Tomatoes and Garlicky Kale, tossed together with pine nuts, lemon and chilies. It sure is a tasty, veggie delight and perhaps...dinner tonight?

Let’s keep spreading the word about all these healthy initiatives! Tell your friends, family, co-workers, even people you don’t like very much because, well, we all deserve to be healthier, don’t we? Meatless Mondays. Let’s do it.
